The problem with that scene is that Quicksilver isn't that fast and if he was he'd solve every problem. It makes no sense that he isn't dragged into every battle.

Your plot problem is typical of anime movies. Someone is talked up as The One, only to suddenly be cut down. A previously secondary character steps into place and completes the One's purpose. Strange is described as a martial arts movie, so I suppose that fits.
Strange is explicitly only protecting the New York branch though. Besides being appointed protector by the Ancient One (she foresaw his meteoric learning curve), he's familiar with the locality.
One thing that was different is that its implied that there is a whole army of wizards. I'm sure some will be joining…
