Not my experience, I was on ios 6, did the update and everything was there. I could not get back into itunes because of the version error and I hadn't backed up to icloud. This was in Windows btw. Perhaps it is different in mac?

I believe the key was to choose update and not restore. I didn't restore from backups either and and all my stuff was still there.

I was concerned too and was pleasantly surprised by the performance on the 4s. I have seen none of the crashing apps behavior and have not had the need to reboot the phone once. Basically its been business as usual with a marginally better OS. Ymmv of course.

I loaded it last week on my 4s, it has ran beautifully ever since. If anything it seems to run faster than ios6 did.
