Because using a 16x9 tablet in portrait mode isn't nearly as comfortable. The 4:3 aspect ratio is better overall for a tablet IMO. Also - they don't photoshop anything... all you have to do is double-tap on the screen to zoom it in and fill up the top and bottom of the frame.
