I’m wondering if this is related to the rise of extra-shitty restaurant customers. Most reasonable people cut back on eating out and flying, so the people who are left are disproportionately terrible.

Some airlines did, at least as a temporary response to the pandemic.  But apparently industry revenues from alcohol are 3x that of food and other beverages, and the markups on alcohol are high.  Most airlines aren’t willing to give that up.
