I feel like you’ve hit the nail on the head pretty well with Attack on Titan. We had a similar discussion at work and another complaint I feel could be levied against it is that, in the anime at least, all characters seem to react to fear pretty similarly - which is to gawk and scream. Colorful in this instance was used as a reference to the bombastic sort of characters used in most anime that aren’t found in GoT or Attack on Titan. Attack on Titan still suffers from melodramatic writing but doesn’t have the forced physical humour or fan service that occupies most anime.
