We don't actually know if Yellow Diamond was the military. It seems like she's taken on those capabilities, but that doesn't mean they were originally hers.

It really isn't very clear at all. Mining seems to have worked out pretty well for humans. The finished Earth colony would have had 85 (?) Kindergartens, I think, and that's with destroying seemingly 99% of the Earth, so I don't think it's exactly a geological thing.
I think the reason they've avoided it so far is because it's a little bit the 'obvious' thing to do if you're going to mix two characters together. This show wants to emphasize the unity of fusion, even as they complicate the design with extra arms, eyes and faces.

On that front, it looks like S6 of Adventure Time is finally going to be released on DVD and Blu-Ray in October, so maybe there's hope for Steven Universe after all.
