The "C.O.W. Boys" were actually created by an employee of Mirage Studios, the company of the creators of the TMNT, and even had a brief cameo in the 2003 TMNT series.
The Geraldo parody character, Hector Ramirez, actually appeared in multiple Sunbow shows after he was in G.I. Joe: Transformers, Jem and the Holograms, and Inhumanoids.

For me, the first episode that I felt that way about was the one where Homer eats the insanity pepper. I wasn't surprised to hear on the DVD commentary that the idea for this episode had been rejected in a previous season. (But it's pure gold compared to the episodes they're making now.)

Haven't seen the DVD version myself, but I've heard they left the Harrison Ford scenes in there.
