I don’t think this has anything to do with feature creep. It has to do with the serious deficiencies FFVII would have as a modern game.
A remake has to be brought up to modern standards to have any chance at success. There’s no way to just give it a fresh coat of paint here.
I’d say starting with Sonic 3 there are definitely stories being told in every Sonic game.

A memory card was the only storage method available. It wouldn’t have been possible to restrict it across multiple memory cards. In City Folk, it was even more restricted than what people are complaining about on Switch.
