Put a cookie sheet (or two) on the rack(s) under it, filled with water. That will keep the humidity in the oven high enough that moisture loss won't be too great a problem, though the skin will lose its crispiness after a while.

Not exactly. You can have multiple labels on a single email. To do the same thing with folders, you would either need multiple copies of the email, or a way to do hard links. If you would have said "Labels are just tags by another name.", I would be in complete agreement.
