Honestly, I went stainless recently and regret it for every reason listed above. I’m just lazy, especially after the fact. If I’m doing my day-to-day cooking I must prefer a non-stick and if I’m making something worth a damn I’ll use my cast iron pan or cast iron dutch oven.
