It doesn't actually make it crunchier; the ice crystals create microfissures inside the potato into which more hot oil can penetrate. So the crunch is deeper than just the surface. That's really what's going on. It's also why pre-boiling works. But this is better because the potato doesn't get waterlogged.

Brilliant work as usual, but I have to say, if you are going that crazy with bacon flavor, you might as well just grind it into the beef and be done with it. Bacon & bacon-toasted bun is about as far as this can be pushed.
