"Chai Tea" always makes me laugh :) I make mine with cardamom, ginger, cinnamon, nutmeg, a bit of peppercorn, and (not too much) clove. I steep it with that strongest, tartest black tea I can find, and usually use slightly older, stale tea to make it slightly bitter. A great accent is a simple syrup made from juniper
