Sex may not be strictly binary, but the distribution is very strongly bi-modal, and so for most things can be treated as binary. So it comes down to being fair to .05% of the population or 50%.
There’s no real right and wrong of it, as the desired outcome is subjective. As you mention, there are sports where women can compete evenly with men just fine (or better). For most though that’s not the case and so you’d rarely if ever even see a woman on the field.
That goes in the same poor analogy bin as “Let’s go a step further and let people marry animals”. Taking your argument to a real conclusion would mean men and women compete together since it is just “natural physical attributes” that differ in the sexes.

Since we have separate male and female classes someone does have to define normative levels. It’s arbitrary, it’s hard, but typically the sport’s governing body gets to do it.
