Nobody knows how fast this boat will go. The fastest submarine ever, the Soviet Alfa class, could sprint up to ~44 knots but not quietly or for very long. All other military submarines travel 30-35 knots, max. The new Littoral Combat Ships can sail ~40 knots and like the Sea Hunter those were designed for speed.
It appears to be designed for LCS-like speed, so it’ll almost certainly be faster than any sub in any navy currently. As for stability, that’s a tougher question.

It’s a ship so, it could dive deeper but it wouldn’t be doing much if it did.
I’d think that a nuc boat spinning up to full or flank speed could be tracked and destroyed without a whole ton of effort- they’re not exactly quiet at that point. This would probably be more for trying to find the subs that are just trolling along quietly hoping you don’t notice.
