Again...the purpose of textures is to imitate life. Adding the details of a rock is detail with a function; that's what rock looks like. Adding bulky extrusions or shapes that accomplish no task within the world is just being excessive.
We have textures in video games because there wouldn't be anything for you to look at otherwise. Models are actually invisible meshes and require at least a grey texture on them in order to be viewable. Beyond that, their purpose is to try imitating life...which even the stylized games do.
