How about a Cioppino stew? Its heavy on the shellfish which are great for the sous vide. Plus, I want to make it, but because I don’t have a great sous vide blog I figured you could walk the path for us.
I vote oxtail. I have 1/4 beef in the freezer with other nasty bits to try too. If you ever want to do tounge or heart I’ll vote for those too. Thanks!
