Huh. I’ve been seasoning my cast iron like this for a long time. It’s probably been at least five years since I stuck a pan in the oven. I also only clean them with hot water right off the stove, never any kind of abrasives, except on rare occasions when there’s something really stuck.

Eh, sweet works for me on something like a burger. For bbq in general I prefer spicy/vinegary sauces.

Big ups on hot & sour and kung pao, both seem to have fallen out of fashion lately, but they’re still noteworthy and tasty.
