Almost no one ever mentions a meat thermometer but that is crucial for anything you're roasting or uncertain of being safe. I love the digital probe ones, though one I caught on fire and another I destroyed when I left it out in the rain. I figure the next one has to get caught in an earthquake.

Get a good quality food processor (you will use it all the time once you have it, from slicing veggies all the way to puréeing for soups/stews/sauces. Also invest in a good pan, a large pot, and a good baking dish. Oh, and a decent cutting board! The rest, buy or borrow as needed. Have fun!

Go get some cast iron skillets. You can find some good sales at TJ Maxx type places or antique stores and reseason them...
Immsersion blender.
A colander! If you want to conserve on items I suggest getting a metal steamer basket instead...that can double as a colander!
Garlic press. Good tupperware. A cutting board that doesn't wobble and can be easily washed in your sink.
