Boardwalk Empire also had several disturbing death/fight scenes that left me rattled. Remember that living room fight scene with the psycho FBI guy? Intense!!!
I doubt it was letters of complaint they were worried about. Most likely they felt it had an unwanted thematic effect to show the full grossness. Maybe I don't know they're a lot smarter than me.

I think the most upsetting part of the Oberyn scene was not that he was killed gruesomely, but rather that the bastard had him beaten and then WHOOSH one leg sweep and it's completely reversed. The peak and valley of the scene is what freaked me out—totally unexpected.
There may be the whole "let's avoid PETA and other canine/animal activists protesting our show for giving dogs a vicious reputation" element to the decision as well…
