There’s something inherently cool about a vehicle that is unashamedly utilitarian and ‘fit for purpose’. It gets good gas mileage. It has room to haul things and a hatch. It’s a safe, and not unpleasant place to spend time.

Pacifica FTW. Hybrid (and ICE Pinnacle trim) gets real, comfortable, adult middle row seats, none of those paper thin stowable things, and are properly removable for maximum utility.
Carnival - 22 mpg
We drove all four minivans, and Carnival was #2—shockingly, we flat-out didn’t like the Sienna. Honda is off my list for many many reasons, but it drove just like every Odyssey they’ve ever built since 1999.
You just described, utterly perfectly, the Pacifica Hybrid. Plenty of electric range, then 30mpg as a hybrid—and seats 7 with ease, or 4 plus everything needed for a 2 week beach vacation.
