Well. I like baking, but I have to go the gluten free route. Any tips on a good pie crust / technique? I know many gluten free breads need much more hydration than a typical gluten dough. I have been able to come up with a good cheesecake and popovers, but a good pie crust eludes me. I can do the store bought crumb

Its all Sysco, or other supplier. Just if it’s raw ingredients, or IQF specials. Very little is from other sources. Bagged sauces, etc. You can get eggs by the crate, or a bucket of eggs with stabilizers. Flour and buttermilk, or freezer biscuits. You can decide - full up scratch kitchen, or heat and eat.

First, Don't buy cheap Port. If there is not a port wine tasting accessible near you, get a wine app. Use it to take pictures of the bottles of port at the store, and buy the best rated in your price range. Personally, I prefer ruby port over tawny. Which reminds me, I have half a bottle left over from Christmas

Turns out, people who eat gluten free that don’t have allergies, don’t order the GF dessert. So instead of 10% eating the GF stuff, you just have the people that do have allergies that might order the dessert.

When I was a kid, my dad took apart the dryer to fix the circuit board and check some funny noises. He found socks wrapped around the drum where the belt went around the drum. Yep, socks would catch at a seam where the drum rotated, pull into the join, and get caught up in the belt.
