Mainly because a valve can rotate, plus a number of other impracticalities of machining a rectangle that needs to fully seal another rectangle.
Pippet valves seal better when all sides exert equal force. This is also the same reason why we do not have oblong pistons (I believe Honda tried this in a motorcycle racing circuit to circumvent the number of cylinder rules). The piston rings don’t exert equal force to seal the cylinder.
Because it’s a circle, you can fit more area using two smaller circles in the main circle than one larger circle.
Bigger valves actual means a smaller percentage of your surface area has an opening. Four can accommodate something like 33% more opening while maintaining wall thickness.*
