Serious Eats has a good "history of queso" article. The last time I made made it, I used cornstarch/evap milk/shredded cheese, but now I wanna try the water/milk/cornstarch above to compare.

Approved! Great recipe, and really the best way to make carbonara. Like she says, it's unforgiving, but streets ahead of spaghetti mixed with scrambled eggs and bacon, which is what you get sometimes. I like it with a handful of green peas mixed in a the end. (Edit: Definitely not canned — get off my back)
