I don't really see any difference between an "us vs them" motif or the idea that its simply mortality. Either way the zombies are still a threat, and thus "them" vs the living "us."
These are excellent questions, because in the pilot the zombies devoured that horse and didn't leave anything behind. You'd think they'd do the same for humans. Of course in most zombie movies, the dead rise from the grave, which is what gets the party started.
