I think it's kinda cool. What the skull actually means is up for debate, but I think of it as a vestigial feature absorbed from the host, not something that really houses eyes. You see that pop up a lot with Giger, facial features that aren't an actual face.

It's probably the skull underneath the head's transparent surface, a design element featured in the original movie but dropped ever since.
