I'd advise anyone to start at the beginning. If you're like me, it may seem like a lot of episodes, but they're gonna disappear in a flash. The show's incredibly watchable and it never felt like a commitment to me.
I ADORE Hannibal but Bates Motel is infinitely more viewer friendly. Compared to Hannibal it's a (well acted, often insightful, compulsively watchable) sitcom. Hannibal is an all-time great but I'm not at all surprised Bates caught on with more people.

The constant whinging about this interview has given Milo more of a "platform" than the interview itself ever could. Instead of being just a 10-minute segment with some conservative douche that few would have ever been aware of, it's now an event that everyone who cares about this kind of thing is going check out.
