Well, if you're trying to hook someone onto the series, then a shortened season 1 may be a good idea. Maybe go with the two-part pilot and then straight to Angel, Nighmares, OOM OOS and Prophecy Girl. I agree with that. No season of Angel had a fully satisfying arc, for one thing. Season 2 comes the closest, but it is like 2 completely different seasons in one.

Restless is one of the best Buffy episodes IMO.

Your friend got it the wrong way around. Veronica Mars is a poorer Buffy without the supernatural or the metaphors.
