I beat FFXIII yesterday! Last boss was moderately challenging, but a bit underwhelming. I still have some hunts left, but I'm kind of tired of JRPGs... Last three games I beat were Pokémon SoulSilver, Dragon Quest IX and FFXIII... I'm in the mood for something more action-ish!
I'm not the type to replay games, I already beat it on Hard anyway and I didn't have any friends to play multiplayer with, at the time. 'Tis a good game, but I didn't really think it was sacrilegious to sell it :-P

Actually, there is coop in UC2, but it's not the story, only side-missions. Still fun though!
The loading times weren't a dealbreaker for me. They're not as bad as they were at launch. Still very noticeable, but it's not infuriating. I'd say races can take about 20 seconds to load.
I sold Uncharted 2 a while ago, but I might buy it back for the multiplayer. It was pretty fun, and I got some friends playing now, which wasn't the case back when I sold it.

I'd say Classic Controller, unless you really want to buy Gamecube games. Most Wii games that support the Gamecube controller support the Classic, but it doesn't work the other way around, at all.

About opening your system, as long as you ground yourself properly and remember where every screw goes, you should be okay. If memory serves, the home button prompts different options when you're playing a PSone Classic. You can, among others, assign if you want to use analog controls or the d-pad (L2 and R2 are mapped to whichever one you're not using) and, yes, change discs.
When you press the PS button, there's an option to "Switch disks" or something like that. I don't know if it's automatic too, because I've never reached a PSone Classic's second disk, but I know there's the option of doing it manually.
If you want to wait for the NGP, there's a good chance that it will be retro-compatible with all the downloadable PSP games. I mean, I haven't read anything about it, but it would make sense. Of course UMDs are out of the question, but if the games that interest you on the PSP are available on PSN, I'd wait it out.
