Hanger is all about the cook. It needs to be cooked right and sliced right and if it is, it is a thing of beauty. I just love the flavour, but if its cut too thick or cooked to much or sliced with the grain instead of against, woe be to the poor sap who has to attempt to chew it.

Especially if its not a particularly good cut of meat - but good cut is subjective. Give me a mid rare skirt or hangar steak over anything else, soooo much flavour but they are chewy and inedible beyond medium.
