For Indian food, it’s not just Tomatoes, but also Chili Peppers and Potatoes. If you are an Indian Vegetarian, cooking without these three ingredients is almost impossible.
The first time I had Neapolitan Pizza at SpaccaNapoli in Chicago. I realized then, what really good cooking and ‘terroir’ really means when it comes to flavors and texture and everything, that makes great food great in the first place.

For me the problem is that most black owned places are not vegetarian friendly. And the ones that are Vegan (In Chicago there’s a lot of these places), are too far from where I live. :(
Veggie Philly. For some reason, the grilled Onion+mushroom+green peppers combined with melted gooey cheese, and mayonnaise, along with Lettuce and Tomatoes .... just really works. There’s a place near DePaul in Chicago called Philly Bros. that does the best version of this.

I don’t understand why people equate Chicago Pizza with ONLY the Deep Dish kind? The non Deep Dish varieties of Pizza in the city can stand with any of the other cities’ pizza offerings.
