The knob is for CUE, the big knob. They made everything redundant controls so you can forego using the touchscreen entirely if you want.
If they dim/block all the light from the LCD screen when you rotate them, they’re linearly polarized.

It kind of takes the light “wave” and turns it into a spiral. It allows you to have polarization that isn’t dependent on the angle of your lenses. TBH the actual science behind it is beyond me, but they’re specifically used by pilots to deal with LCD…
