I think it's because Wendy realized in that moment that Lara's invitation was at least in some measure about bringing up the boundary that Lara believed Axe had been responsible for setting. It was a bit of a subtle, "Fuck me? No, I think you'll find this is actually fuck you." moment.
I don't think it's so much the lying as it is Axe manipulating her with it. He turned Wendy's demand for boundaries into his acceptance of Lara's request for boundaries. He played the situation no differently than he would have with some outside party, despite Lara being the only other adult who "matters".
