I bought an oldish canon p&s for just this reason, fire it up, load the timelapse script and... done!
+1 for gphoto. scriptable tethered shooting makes for interesting uses!

Does anyone have experience of any water-proofing cases for EVIL cameras?! I'm in love with my Sony DSC-TX5 as I just shove it in a pocket and don't worry about it! It's great the photo's you can get from on/in the water, but would be keen to work on my surf/sailing photography with something a bit better perhaps...
Thanks for your input - finally got round to playing with a couple of pics at the weekend, got a pretty good effect (need to work on tweaking the edges of the subject/focus to stay sharp but not too sharp!).
