I love crispy and crunchy foods but I completely agree. This looks like a cracker which is all wrong for a hash brown. I'd rather have a soft hashbrown than this I think.

Yeah, I’d be pretty upset if a diner served them like that! Yes, they are supposed to have a crust on them, but the inside should still be soft. I don’t want the whole thing to crunch, just some nice textural variation.

This woman is just a bad businesswoman, plain and simple. Why are you hosting pop-up kitchens, and not taking a cut of the food sales. Doing so would instantly mitigate the problem.
