The gauge is better than nothing but you're not starting with a vacuum on the system. You're injecting refrigerant into one side while the other side is closed. So the gauge is reading the previous pressure which could be the atmospheric pressure then the additional refrigerant.

Also, because it means the system wasn't fully vacuumed out. You need to remove as much of the possibly moist air from the system as possible before adding refrigerant in order to make sure you've got nothing but refrigerant and lube in the system. Any air reduces the effectiveness.

Each car’s system has a refrigerant capacity. A professional ac machine connects to the high and low side and evacuates the system then refills to the correct level. The machine should also inject PAG or Mineral oil into the system for lubrication. New cars have smaller and smaller capacities and a pressure switch
