So; I have this HUGE steak that I have “invested” big bucks in. I will NOT head to the grill with it. I am going to cook it Bistro style. Insert remote read temperature probe through the side of the steak to the center. Place on rack. Into the oven at 250 degrees. Convection on. Exit at 120 degrees internal temp. Rest
