Rock is between 2 and 3 times as dense as water. When it is in the canoe it displaces the equivalent weight of water (i.e. a volume greater than the volume of the rock). When it is thrown overboard it only displaces its own volume, so the water level will go down.
It looks like all three gauges are printed and stuck on to the glass of the original instruments. They don’t look 3D and the needle on the RND display overlays the border. I think they are mock ups of what the proposed instruments might be. Hopefully, they do actually come out like that, and I see that Smiths…
