It feels to me that if you’re a food magazine with a test kitchen, a good argument for dropping beef is “the ways to make beef taste good are well documented and generally uncomplicated”. So trying to come up with new ideas here is a waste of time.

There is good barbecue in Minnesota, but I’m not aware of any outside the cities (Jordan is a city of 6000 people, most places with 6000 people don’t have great dining).
