Yeah, this addition totally sucks if you have a shellfish allergy but actually fish sauce in a glaze is delicious! It adds a little extra something. I made a glaze last night with fish sauce and hoisin. It tasted really nice (a little salty extra something).

I like that many restaurants these days will ask before taking your order if you have any food allergies. Seems like a good best practice and takes the onus off the diner (it can be embarrassing to announce allergies and sound like “that guy.”). I say this as someone with NO ALLERGIES THANK GOD.
