don't feel bad, stainless is probably the hardest surface to cook on of them all. And sometimes the way you need to cook on it will make stuff stick no matter what, but then traditionally you can use that to make great sauce by simmering stock/wine/etc in it.

Not Jolie, but, for those pans, just simmer some soapy water. The stuff will all loosen back up after a little bit. Also you may be able to adjust your oils and your heats and get less stuff sticking. Stainless is finicky!
