They definitely use Maya, and I’ve seen references to them using 3DS Max (though I’m not sure it’s part of their regular workflow), plus more - Mari, Z-Brush, Mudbox, Houdini, etc. and whatever custom stuff they’ve put together.

Rising Sun use Houdini for the most part, but that may just be for the dynamic simulations. Maya and Max are both used extensively for modelling by the GoT FX houses. Maya gets a little more use than Max but if you learn one well it’s not a massive leap to get to grips with the other.
