A lot of what they do is pressuring governments and corporations to pass laws/adopt humane practices/stop inhumane practices. They do often do more publicity-focused things to keep their profile up but they do heaps of important work behind the scenes.

I was recently in China (a big city though, not the countryside) and there were vegan options a-plenty. I was almost overwhelmed by choice. It’s a massive population, so I think there is definitely a market for foreign brands with fancy faux meats.

I agree that the tax laws are ridiculous, and the gov knows it too, because you’re not technically allowed to renounce citizenship for the purpose of wanting to avoid the double tax. But I guess people lie on their applications.
