I can't remember where I read this, but I think GRRM explicitly compared the Seven to the Catholic Church. The seven aren't separate gods, but aspects of one God - just like the trinity. The old gods could be compared to the Slavic Pagans, and the geography of the North (wide open, sparsely populated) could back this
