Lifetime resident (well, since 9), a few things to add - mainly Minneapolis specific.
For those that might not be up for frying for finishing, broiling works super well too. Keep a close eye to make sure the carnitas don’t burn, and flip/turn the meat once it looks good on top. I like to freeze before that step if saving.
