The plot doesn’t work without that scene, both in the books and the show. The most important thing about that scene was that Theon wasn’t in that scene.... Reek was in that scene. Theon died when he lost his penis. Reek took his place so completely that Theon effectively ceased to exist.

The same applies for a lot of things that are portrayed onscreen though. If you only showed what was strictly necessary, shows would be 5 minutes long.
