Pretty much as Grant described. Mine has a button you press for when you want some footage saved and not re-recorded over later...like a meteor striking your car's hood or a miscreant looking for an insurance payout by jumping right in front of you at the last possible moment.
Most plug into your cigarette lighter and auto start recording when it receives power (IE when you turn your car on and off). Others have motion detection for when you're parked if your car gets hit. They also auto overwrite the oldest files when the card is full.
