I just figured it out! I re-bought the game for PS4 and am currently doing an all-1st-person play through. I set the button layout to "Standard FPS" since it was more intuitive for first person, and lo and behold you can just click to sprint instead of hold.

Hah, I just did that triathlon last weekend. Setting the button layout to Standard FPS allows you to toggle sprint while swimming and running.
