I haven't tried that...I just mean straight up watermelon meat (diced and pickled). I'd def try the pickled rinds...but I think it takes longer. You can do a flash pickle on most fruits with vacuum seal. It's great with apple cider vinegar (for fruit), you can add sugar or you can make it spicy with peppers, red

It's the amazing combo of mild sweet with acid and sour. There are a lot of great recipes for pickled fruits on the web, depending on your taste preferences. But, I would suggest always using apple cider vinegar...or maybe a wine vinegar. Some call for it to be more peppery, others sweet...etc....again what you like.
