Studios often cast pretty at the expense of talent. I'm sure there were more talented asian actresses out there, but they might not have had the 'right' look.

Excpet Angie doesn't lessen her sense of isolation because Angie has no idea about what she is doing, while Jarvis does.
It's a different story, and it would also imo make the Jarvis/Howard relationship like a proto Pepper/Tony. Plus, if you're going the two female co-leads route, it would seem like it would make sense for Jarvis to eventually ditch Howard and we know that doesn't happen.
Plus, having a Jarvis like character as a woman would be too much like Pepper and Tony for my tastes. it might not be exactly identical but a loyal woman always cleaning up his messes would tip over into too much father/son similarities. They already have enough of those I think they don't need more.
Or we could look at one name people do know, Julia Child. But not for her war time role as a fairly high ranking top secret research assistant in the intelligence department of the office of strategic services. Even after the war was over and she left the intelligence world and got married, when she tried to get some…
I actually think she's a good actress, but it was still obvious the situation was weird.
