Can confirm VR greatness for racing games. I bought a Rift pretty much exclusively for use with Assetto Corsa and Project CARS on the PC since I already had a rig strong enough to run it, a wheel and pedals, and the Rift basically cost the same as the two screens I was looking at using for surround gaming anyway.

Honestly, as someone into sim-racing, the full support for Project CARS and the idea of being able to drive in VR is enough to make me want either this or the the Vive as soon as possible.

Sure, but factor in time to heat the pan/oven to 500 and you get to a fair bit over 10 minutes. Maybe not as long as sous vide in total, but still longer than your initial estimate. If you let your meat sit in salt at all beforehand then your total time increases even more. Then you still have to worry about timing
